Here’s a refreshing and classic Creamy Cucumber Salad cool, tangy, and perfect as a summer side dish or a light, crunchy snack.

Ingredients:

  • 2 large cucumbers, thinly sliced (English or Persian cucumbers work best)

  • 1/2 small red onion, thinly sliced (optional)

  • 1/2 cup sour cream or Greek yogurt

  • 1 tbsp mayonnaise (optional for extra creaminess)

  • 1 tbsp white vinegar or lemon juice

  • 1 tsp sugar or honey (to balance acidity)

  • 1–2 tbsp fresh dill, chopped (or 1 tsp dried)

  • Salt & black pepper to taste

  1. Salt the cucumbers (optional for extra crunch):
    Place cucumber slices in a colander, sprinkle with salt, and let sit for 15–30 minutes. Pat dry with paper towels.

  2. Mix the dressing:
    In a large bowl, combine sour cream (or yogurt), mayo (if using), vinegar/lemon juice, sugar, dill, salt, and pepper. Stir until smooth.

  3. Toss salad:
    Add cucumbers (and onions, if using) to the bowl. Toss to coat evenly.

  4. Chill:
    Refrigerate for at least 20 minutes before serving to let the flavors meld.

  • For extra crunch, use a mandoline to slice cucumbers very thin.

  • Add a little garlic powder or chopped fresh chives for extra flavor.

  • Keeps well in the fridge for up to 2 days.
