Cottage Cheese Flatbread is a soft, fluffy, and delicious flatbread with the added protein and creaminess from cottage cheese. It’s perfect for a light meal, snack, or pairing with dips and salads. Here’s an easy recipe to make it!

Cottage Cheese Flatbread Recipe

Ingredients:

  • 1 cup cottage cheese (drained if it’s too wet)
  • 1 1/2 cups all-purpose flour (you can substitute with whole wheat for a healthier option)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil (optional, for extra softness)
  • 1/4 teaspoon garlic powder (optional, for extra flavor)
  • 1 large egg (optional, helps with binding)
  • Water (as needed to form the dough)

Instructions:

  1. Prepare the Dough:

    • In a large bowl, combine the cottage cheese, flour, baking powder, salt, and garlic powder (if using).
    • If using an egg, add it to the mixture. Stir everything together until combined.
    • Gradually add small amounts of water (1 tablespoon at a time) and mix until the dough comes together. You want it to be soft, but not too sticky. If it’s too sticky, add a little more flour; if it’s too dry, add a little more water.
  2. Knead the Dough:

    • Once the dough has come together, turn it out onto a lightly floured surface and knead for 2-3 minutes until smooth and elastic. If the dough feels too sticky, sprinkle a little flour to help with the kneading.
  3. Roll Out the Flatbreads:

    • Divide the dough into 4-6 equal portions, depending on how large you want your flatbreads.
    • Roll each portion into a ball and then flatten it with your hands or a rolling pin into a round or oval shape, about 1/4 inch thick.
  4. Cook the Flatbreads:

    • Heat a large non-stick skillet or griddle over medium heat. Add a small amount of oil if you’d like a slightly crispier texture, or cook them dry for a more rustic feel.
    • Once the skillet is hot, place one flatbread in the skillet and cook for about 2-3 minutes on each side, until golden brown spots form and the flatbread is cooked through.
    • Repeat with the remaining dough.
  5. Serve:

    • Serve the flatbread warm with dips, hummus, yogurt, or as a side to your favorite dishes like salads, stews, or grilled meats.
