🌶️🧄 Chili Garlic Butter Chicken Bites with Creamy Cajun Corn Alfredo Twists

🔸 Part 1: Chili Garlic Butter Chicken Bites

Ingredients:

  • 1.5 lbs (680g) chicken breast or thighs, cut into bite-sized pieces

  • 3 tbsp unsalted butter

  • 1 tbsp olive oil

  • 4 garlic cloves, minced

  • 1–2 tsp chili flakes (adjust to taste)

  • 1 tbsp chili garlic sauce (like Sambal Oelek or Sriracha, optional for extra heat)

  • Salt and pepper, to taste

  • 1 tbsp lemon juice or splash of vinegar (for balance)

  • Fresh parsley or green onions (for garnish)

Instructions:

  1. Season the Chicken:

    • Toss chicken with salt, pepper, and a little chili garlic sauce (if using). Let sit for 10–15 minutes.

  2. Cook the Chicken:

    • In a skillet, heat olive oil and 1 tbsp butter over medium-high. Add chicken and cook until browned and cooked through (6–8 minutes). Remove and set aside.

  3. Make the Chili Garlic Butter:

    • In the same skillet, reduce heat to medium. Add remaining butter, minced garlic, and chili flakes. Sauté for 1–2 minutes until fragrant (don’t burn the garlic).

  4. Combine:

    • Add the cooked chicken back into the pan. Toss in the chili garlic butter and finish with lemon juice. Garnish and keep warm.

🔸 Part 2: Creamy Cajun Corn Alfredo Twists

Ingredients:

  • 8 oz (225g) pasta twists (rotini or fusilli work great)

  • 1 tbsp butter

  • 2 garlic cloves, minced

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 tsp Cajun seasoning (or to taste)

  • ¾ cup heavy cream (or half-and-half)

  • ½ cup grated Parmesan cheese

  • Salt and pepper, to taste

  • ½ tsp smoked paprika (optional, for depth)

  • Chopped parsley or green onions (for topping)

Instructions:

  1. Cook the Pasta:

    • Boil pasta in salted water until al dente. Reserve ½ cup of pasta water and drain the rest.

  2. Sauté Corn:

    • In a skillet, melt butter over medium heat. Add garlic and corn. Sauté for 3–5 minutes until corn is slightly golden.

  3. Make Alfredo Sauce:

    • Stir in Cajun seasoning, paprika, cream, and Parmesan. Simmer gently until thickened (about 3–4 minutes). Add reserved pasta water as needed to loosen the sauce.

  4. Combine:

    • Toss the cooked pasta into the sauce until well-coated. Adjust seasoning to taste.

🔸 To Serve:

Plate the creamy Cajun corn Alfredo pasta, then top with the spicy chili garlic butter chicken bites. Garnish with chopped parsley, extra cheese, or chili flakes if desired.
