Here’s a hearty and healthy Chicken Sausage & Roasted Veggie Bowl recipe—perfect for meal prep or a wholesome weeknight dinner.


🍲 Chicken Sausage & Roasted Veggie Bowl

📝 Ingredients (Serves 2–4):

For the veggies:

  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt & black pepper, to taste

For the sausage:

  • 2–3 fully cooked chicken sausages (sliced; Italian or spicy work great)
  • 1 teaspoon olive oil (for pan-searing)

For the base:

  • 1 cup cooked brown rice, quinoa, or cauliflower rice

Optional toppings:

  • Hummus or tzatziki
  • Crumbled feta or goat cheese
  • Avocado slices
  • Fresh parsley or cilantro
  • Lemon wedges

🔥 Instructions:

  1. Roast the veggies:
    • Preheat oven to 425°F (220°C).
    • Toss chopped vegetables with olive oil, garlic powder, paprika, salt, and pepper.
    • Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until tender and slightly charred.
  2. Cook the sausage:
    • While veggies roast, heat 1 tsp olive oil in a skillet over medium heat.
    • Sauté sliced chicken sausage for 5–7 minutes until browned and heated through.
  3. Assemble the bowls:
    • Divide your grain (rice/quinoa/etc.) into bowls.
    • Top with roasted veggies and chicken sausage slices.
    • Add your choice of toppings: a dollop of hummus, a sprinkle of cheese, or fresh herbs.
  4. Serve:
    • Finish with a squeeze of lemon or a drizzle of your favorite dressing.
