🧆 Chicken Ricotta Meatballs

Ingredients:

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs (or panko)
  • 1 egg
  • 2 garlic cloves, minced
  • 1/4 cup chopped parsley (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil (for baking or frying)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix all ingredients until just combined—do not overwork the mixture.
  3. Form into 1.5-inch meatballs (about 18-20).
  4. Place on a parchment-lined baking sheet. Lightly brush or spray with olive oil.
  5. Bake for 18–20 minutes until cooked through and golden. (Or pan-fry in a bit of oil until browned and cooked.)

🥬 Spinach Alfredo Sauce

Ingredients:

  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 cups fresh spinach, chopped
  • Pinch of nutmeg (optional)

Instructions:

  1. In a saucepan over medium heat, melt butter.
  2. Add garlic; sauté 30 seconds until fragrant.
  3. Pour in cream and bring to a gentle simmer.
  4. Stir in Parmesan, salt, pepper, and nutmeg. Simmer until thickened (4–5 minutes).
  5. Add spinach; cook until wilted (1–2 minutes).
  6. Add cooked meatballs to the sauce, toss to coat, and simmer 2–3 more minutes.

🍝 Serving Suggestions:

  • Serve over fettuccine, mashed potatoes, or creamy polenta.
  • Top with extra Parmesan and cracked black pepper.
  • Add a squeeze of lemon for brightness.
