Cheesy Mississippi Mud Potatoes a Southern comfort food favorite! It’s loaded with potatoes, crispy bacon, cheese, and sour cream, all baked to golden, melty perfection.


 Cheesy Mississippi Mud Potatoes

🧾 Ingredients:

  • 6 cups russet potatoes, peeled and diced into ½-inch cubes (about 3–4 medium potatoes)

  • 1 lb bacon, chopped

  • 2 cups shredded cheddar cheese (sharp cheddar works best)

  • 1 cup sour cream

  • ½ cup mayonnaise (optional, but adds creaminess)

  • 1 small onion, finely diced

  • 2–3 green onions, sliced (for garnish)

  • ½ tsp garlic powder

  • ½ tsp paprika

  • Salt and pepper to taste

  • Optional: chopped parsley or chives for garnish


🍳 Instructions:

1. Preheat Oven & Prep Potatoes:

  • Preheat oven to 375°F (190°C).

  • Peel and dice potatoes. Parboil them in salted water for 5–7 minutes until just barely fork-tender. Drain well.

2. Cook Bacon:

  • In a skillet, cook chopped bacon until crispy. Remove with a slotted spoon and drain on paper towels. Reserve 1 tbsp of the bacon grease if desired for extra flavor in the mix.

3. Mix It All Together:

  • In a large mixing bowl, combine:

    • Cooked potatoes

    • Crumbled bacon (reserve a bit for topping)

    • Shredded cheese (reserve ½ cup for topping)

    • Sour cream

    • Mayonnaise (if using)

    • Diced onion

    • Garlic powder, paprika

    • Salt & pepper to taste

  • Gently fold everything together until evenly coated.

4. Bake:

  • Transfer mixture to a greased 9×13-inch baking dish.

  • Top with reserved cheese and bacon.

  • Bake uncovered for 35–40 minutes, or until cheese is bubbly and the top is golden brown.

5. Garnish & Serve:

  • Let rest for 5–10 minutes.

  • Sprinkle with green onions, parsley, or chives before serving.


🔁 Variations:

  • Add protein: Stir in diced cooked chicken or ground beef for a full meal.

  • Extra cheesy: Mix in a little cream cheese or Velveeta for an even creamier texture.

  • Spicy version: Add chopped jalapeños, a dash of hot sauce, or pepper jack cheese.
