Here’s a simple, comforting recipe for Cheesy Baked Yellow Squash Rounds — tender squash slices baked with a crispy, cheesy topping. It’s the perfect easy side dish for any meal, especially in late summer when squash is plentiful.


🧀 Cheesy Baked Yellow Squash Rounds

Prep Time: 10 minutes
Cook Time: 20–25 minutes
Serves: 4–6


📝 Ingredients:

  • 3–4 medium yellow squash, sliced into ¼-inch thick rounds
  • 1–2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • ¾ cup shredded Parmesan cheese (or a blend of Parmesan and cheddar)
  • ½ cup panko breadcrumbs or crushed Ritz crackers (optional, for extra crunch)
  • Optional: chopped parsley or thyme for garnish

👩‍🍳 Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil, and lightly grease it.
  2. Prepare the squash:
    • Wash and slice squash into ¼-inch thick rounds.
    • Place slices in a bowl and toss with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Arrange on baking sheet:
    • Lay squash rounds in a single layer, not overlapping.
  4. Top with cheese:
    • Sprinkle each round generously with shredded Parmesan (and cheddar if using).
    • If using breadcrumbs or crushed crackers, sprinkle those over the cheese for a crispy finish.
  5. Bake for 20–25 minutes, or until cheese is golden and bubbling, and squash is tender.
  6. Optional broil:
    • For a crispier top, broil on high for 1–2 minutes at the end — watch closely!
  7. Garnish and serve:
    • Sprinkle with chopped herbs if desired. Serve hot as a side dish or snack.

✅ Tips:

  • Works great with zucchini too — or a mix of both.
  • For extra richness, add a dollop of garlic butter before baking.
  • Want it creamier? Add a little mozzarella or gruyère with the Parmesan.
