Here’s an indulgent, bakery-style treat: Cheesecake Stuffed Chocolate Chip Cookies — soft, chewy cookies with a surprise creamy cheesecake center. Perfect for when you can’t decide between cookies and cheesecake!


🍪 Cheesecake Stuffed Chocolate Chip Cookies

🧀 Cheesecake Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp granulated sugar
  • ½ tsp vanilla extract

🍫 Chocolate Chip Cookie Dough:

  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups semi-sweet chocolate chips

👩‍🍳 Instructions:

1. Make Cheesecake Filling:

  • In a small bowl, beat cream cheese, sugar, and vanilla until smooth.
  • Drop small dollops (about 1 tsp each) onto a parchment-lined plate or baking sheet.
  • Freeze for 30–60 minutes until firm.

2. Make Cookie Dough:

  • Cream butter and sugars until light and fluffy (2–3 minutes).
  • Beat in eggs and vanilla.
  • In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet ingredients.
  • Stir in chocolate chips.
  • Chill dough for at least 30 minutes (recommended for easier shaping).

3. Assemble Cookies:

  • Scoop about 2 tbsp cookie dough, flatten it in your hand.
  • Place a frozen cream cheese ball in the center, then wrap the dough around it, sealing completely.
  • Roll into a ball and place on a parchment-lined baking sheet. Repeat with remaining dough and filling.
  • Chill the assembled cookie balls for 15–30 minutes (helps prevent spreading).

4. Bake:

  • Preheat oven to 350°F (175°C).
  • Bake cookies for 11–13 minutes, or until edges are golden and centers are just set.
  • Cool on the pan for 5–10 minutes before transferring to a rack.

📝 Tips & Variations:

  • Want extra gooey centers? Underbake by 1 minute and let rest on the tray.
  • Add mini chocolate chips to the cheesecake filling for texture.
  • Stuff with flavored cream cheese (strawberry or cinnamon swirl) for a twist.
  • These freeze beautifully — bake, cool, and freeze in an airtight container for up to 2 months.
