Char Siu Chicken

Char Siu Chicken is a delicious twist on the traditional Chinese Char Siu (BBQ pork), using chicken instead of pork. It’s flavorful, sticky, and slightly sweet with a deep umami richness from the marinade. Here’s a simple recipe you can try at home:


🍗 Char Siu Chicken Recipe

Ingredients:

  • Chicken:

    • 4 boneless chicken thighs (or breasts, but thighs stay juicier)

  • Marinade:

    • 3 tbsp hoisin sauce

    • 2 tbsp soy sauce

    • 1 tbsp oyster sauce

    • 1 tbsp honey (or maltose for a more authentic glaze)

    • 1 tbsp brown sugar

    • 1 tbsp Shaoxing wine (or dry sherry)

    • 1 tsp five-spice powder

    • 2 cloves garlic, minced

    • 1 tsp sesame oil

    • A few drops of red food coloring (optional, for classic Char Siu color)


Instructions:

  1. Prepare Marinade:

    • In a bowl, mix all the marinade ingredients until combined.

  2. Marinate Chicken:

    • Add the chicken to the marinade, coat well, and refrigerate for at least 4 hours (overnight is best).

  3. Cook the Chicken:

    • Oven method:

      • Preheat oven to 400°F (200°C).

      • Line a baking tray with foil and place a rack on top.

      • Lay the chicken on the rack and bake for 20–25 minutes, basting with leftover marinade halfway.

    • Optional broil: For a caramelized finish, broil for 2–3 minutes at the end until slightly charred.

    • Grill method:

      • Grill over medium-high heat for 4–6 minutes per side, basting occasionally.

  4. Rest & Slice:

    • Let the chicken rest for 5 minutes before slicing. Serve with rice or noodles.


🔥 Serving Tips:

  • Serve with steamed jasmine rice and blanched bok choy.

  • Add a drizzle of extra marinade (boiled to thicken) for extra flavor.

  • Makes a great filling for bao buns or wraps.
