🥕🍌 Carrot Cake Banana Bread

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 ½ tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp salt

  • 3 ripe bananas, mashed

  • 1 cup grated carrots (about 2 medium carrots)

  • ½ cup vegetable oil or melted coconut oil

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup chopped walnuts or pecans (optional)

  • ½ cup raisins or shredded coconut (optional)


Instructions:

  1. Preheat oven:
    Preheat to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

  2. Mix dry ingredients:
    In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

  3. Mix wet ingredients:
    In a large bowl, combine mashed bananas, grated carrots, oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth.

  4. Combine:
    Gradually add the dry ingredients to the wet, stirring just until combined. Fold in nuts and raisins/coconut if using.

  5. Bake:
    Pour batter into prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

  6. Cool:
    Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.


Optional frosting:

Try a classic cream cheese frosting — blend 4 oz cream cheese, 2 tbsp butter, 1 cup powdered sugar, and 1/2 tsp vanilla until smooth, then spread on cooled bread.
