Here’s a quick and flavorful recipe for Bok Choy Stir-Fried Beef — tender strips of beef, crisp-tender bok choy, and a savory garlic-ginger sauce come together in under 30 minutes. Perfect over rice or noodles!


🥡 Bok Choy Stir‑Fried Beef

Prep Time: 15 minutes
Cook Time: 10–12 minutes
Serves: 4


📝 Ingredients:

For the Beef & Marinade:

  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 1/2 tsp baking soda (optional, for ultra-tender beef)

For the Stir-Fry:

  • 1–2 tbsp neutral oil (e.g., canola or avocado oil)
  • 3–4 cups baby bok choy, halved or chopped if large
  • 3 cloves garlic, minced
  • 1 tbsp ginger, finely grated
  • 2 scallions, chopped (whites and greens separated)
  • 1/2 tsp chili flakes or 1 fresh chili, sliced (optional)

For the Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce (optional, for richer color)
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 tsp brown sugar or honey
  • 1/4 cup beef broth or water
  • 1 tsp cornstarch (mixed into the sauce)

👩‍🍳 Instructions:

🔸 Step 1: Marinate the Beef

  1. In a bowl, toss sliced beef with soy sauce, sesame oil, cornstarch, and baking soda (if using).
  2. Let marinate for 15–30 minutes while prepping the vegetables and sauce.

🔸 Step 2: Mix the Sauce

  1. In a small bowl, whisk together all sauce ingredients and set aside.

🔸 Step 3: Stir-Fry!

  1. Heat 1 tbsp oil in a hot wok or large skillet over high heat.
  2. Add beef in a single layer (work in batches if needed). Sear for 1–2 minutes per side until browned but not overcooked. Remove to a plate.
  3. Add a little more oil if needed. Toss in garlic, ginger, and scallion whites, sauté for 30 seconds until fragrant.
  4. Add bok choy and stir-fry for 2–3 minutes, until bright green and slightly tender.
  5. Return beef to the pan. Give the sauce a quick stir and pour it in.
  6. Stir-fry everything together for 1–2 more minutes, until sauce thickens and coats the beef and bok choy.

✅ Serve with:

  • Steamed jasmine rice or brown rice
  • Lo mein or rice noodles
  • Optional garnish: scallion greens, sesame seeds, or a drizzle of chili oil
