🧾 Ingredients

For the Cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1½ cups light brown sugar, packed
  • 4 large eggs

  • ½ tsp baking soda

  • 1 cup buttermilk
  • 15 Oreo cookies, roughly chopped

  • ½ cup light brown sugar
  • 2 tbsp milk or cream
  • ½ cup powdered sugar
  • Pinch of salt
  • 1 tsp vanilla

🔪 Instructions

1. Prep the Oven & Pan:

  • Preheat oven to 325°F (165°C).
  • Grease and flour a bundt or 9×5-inch loaf pan, or line with parchment if using a loaf pan.

2. Make the Cake Batter:

  1. In a large bowl, cream butter and brown sugar until fluffy (2–3 minutes).
  2. Add eggs one at a time, mixing well after each. Stir in vanilla.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Add dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with dry ingredients.
  5. Gently fold in chopped Oreos and white chocolate chips if using.

3. Bake:

  • Pour batter into prepared pan and smooth the top.
  • Bake for 50–60 minutes or until a toothpick comes out clean (start checking at 50 min).
  • Let cool in the pan for 15–20 minutes, then remove to a wire rack to cool completely.

4. Make the Blondie Glaze (optional):

  1. In a small saucepan, melt butter and brown sugar over medium heat until bubbly and smooth.
  2. Stir in milk and bring to a simmer.
  3. Remove from heat and whisk in powdered sugar, vanilla, and a pinch of salt.
  4. Drizzle over cooled cake.

🍽 Serving Tips:

  • Serve slightly warm with a scoop of vanilla ice cream.
  • Want extra Oreo flair? Press mini Oreo halves on top of the glaze before it sets.
