Serves: 4 | Prep Time: 10 min | Cook Time: 20 min


🛒 Ingredients

  • 4 white fish fillets (e.g., cod, halibut, tilapia, or snapper)
  • 2 tbsp olive oil
  • 1 lemon (zest + juice)
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • ⅓ cup pitted Kalamata olives, sliced
  • ¼ cup red onion, thinly sliced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley or basil, chopped (for garnish)

👩‍🍳 Instructions

  1. Preheat Oven:
    Preheat to 400°F (200°C). Lightly grease a baking dish.
  2. Season the Fish:
    Pat fish dry and place in the dish. Drizzle with 1 tbsp olive oil and lemon juice. Sprinkle with salt, pepper, lemon zest, and oregano.
  3. Add Toppings:
    Scatter cherry tomatoes, olives, red onion, and garlic over and around the fillets. Drizzle remaining 1 tbsp olive oil over the top.
  4. Bake:
    Bake uncovered for 15–20 minutes (depending on thickness), or until fish flakes easily with a fork.
  5. Serve:
    Garnish with fresh herbs and extra lemon wedges. Serve over rice, couscous, quinoa, or alongside roasted veggies.

📝 Tips & Variations

  • Use parchment or foil for easy cleanup and to lock in moisture (optional).
  • Add thinly sliced zucchini or bell peppers for extra veggies.
  • For a spicier kick, sprinkle with red pepper flakes or add sliced chili.
  • Works with frozen fish—just thaw completely and pat dry first.
