πŸ₯— Beet Salad with Feta, Cucumbers, and Dill
Ingredients:
3–4 medium cooked beets (roasted or boiled), peeled and diced

1 cup cucumber, sliced or diced

1/3 cup feta cheese, crumbled

2 tbsp fresh dill, chopped (or 1 tsp dried)

2 tbsp olive oil

1 tbsp red wine vinegar or lemon juice

Salt and pepper to taste

Optional Add-ins:
Thinly sliced red onion or scallions

A handful of arugula or baby spinach

Crushed walnuts or pine nuts for crunch

Instructions:
In a large bowl, combine the diced beets and cucumbers.

Add the feta and fresh dill.

In a small bowl, whisk together olive oil, vinegar (or lemon juice), salt, and pepper.

Pour the dressing over the salad and gently toss to combine.

Chill for 15–30 minutes before serving, if desired, to let the flavors meld.
