🫐 Balsamic Blueberry Goat Cheese Crostinis

📝 Ingredients (Makes about 12 crostinis):

For the Crostini Base:

  • 1 baguette, sliced into ½-inch pieces (about 12 slices)
  • 2–3 tbsp olive oil
  • Pinch of salt

For the Topping:

  • 4 oz goat cheese, softened
  • 1 cup fresh blueberries
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar (aged or balsamic glaze works too)
  • 1–2 tsp fresh thyme or basil, finely chopped (optional)
  • Pinch of black pepper or a tiny pinch of salt (to enhance flavor)

👩‍🍳 Instructions:

1. Make the Crostinis:

  • Preheat oven to 375°F (190°C).
  • Arrange baguette slices on a baking sheet, brush with olive oil, and sprinkle lightly with salt.
  • Bake for 8–10 minutes, or until golden and crisp. Let cool.

2. Make the Blueberry Mixture:

  • In a small saucepan over medium heat, combine blueberries, honey, and balsamic vinegar.
  • Cook for 4–6 minutes, stirring gently, until blueberries soften and start to burst slightly. Remove from heat and let cool slightly.

3. Assemble the Crostinis:

  • Spread a layer of goat cheese on each toasted baguette slice.
  • Top with a spoonful of the warm balsamic blueberry mixture.
  • Garnish with thyme or basil and a crack of fresh black pepper if desired.

🌿 Tips & Variations:

  • Make it ahead: Toast crostinis and prep the blueberry topping a few hours in advance; assemble just before serving.
  • Sub goat cheese with whipped cream cheese or ricotta for a milder flavor.
  • Want extra crunch? Add chopped toasted walnuts or pistachios on top.
  • Use balsamic glaze instead of vinegar for a thicker, sweeter drizzle.
