Baked Shrimp Scampi

Here’s a flavorful and easy Baked Shrimp Scampi recipe — buttery, garlicky, lemony shrimp with a crisp golden topping, perfect for a quick dinner or impressive appetizer.


🍤 Baked Shrimp Scampi

Ingredients (serves 4–6):

  • 1½ lbs (680g) large shrimp, peeled and deveined (tails on or off)
  • 4 tbsp unsalted butter, melted
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • ½ tsp crushed red pepper flakes (optional, for heat)
  • Juice and zest of 1 lemon
  • Salt and black pepper, to taste
  • ¼ cup dry white wine or chicken broth
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prep the shrimp:
    • Pat shrimp dry with paper towels and place them in a baking dish in a single layer.
  3. Make the sauce:
    • In a small bowl, whisk together the melted butter, olive oil, garlic, red pepper flakes (if using), lemon juice + zest, white wine (or broth), salt, and pepper.
    • Pour the mixture evenly over the shrimp.
  4. Add topping:
    • In another small bowl, mix panko breadcrumbs with Parmesan and a drizzle of olive oil.
    • Sprinkle evenly over the shrimp.
  5. Bake:
    • Bake uncovered for 12–15 minutes, or until shrimp are pink and opaque.
    • Broil for 1–2 minutes at the end for a golden-brown topping (watch closely!).
  6. Garnish and serve:
    • Sprinkle with fresh parsley and serve with lemon wedges.

🍽 Serving Ideas:

  • Serve over pasta, rice, or crusty bread to soak up the juices.
  • Pair with a crisp white wine like Sauvignon Blanc or Pinot Grigio.
