Here’s a simple, flavorful recipe for Baked Parmesan Yellow Squash a light, crispy, and cheesy side dish that highlights the natural sweetness of summer squash.


🧀 Baked Parmesan Yellow Squash

🥒 Ingredients:

  • 2–3 medium yellow squash, sliced into ¼-inch rounds

  • 2 tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp Italian seasoning (or just dried oregano/basil)

  • Salt & pepper to taste

  • ½ cup grated Parmesan cheese (freshly grated is best)

  • Optional: ¼ cup breadcrumbs (for extra crispness)

  • Optional garnish: fresh parsley or a squeeze of lemon


🔥 Instructions:

  1. Preheat Oven:

    • Set oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prep the Squash:

    • Wash and slice yellow squash into ¼-inch thick rounds.

    • In a bowl, toss the slices with olive oil, garlic powder, Italian seasoning, salt, and pepper.

  3. Add the Topping:

    • Arrange the squash slices in a single layer on the baking sheet.

    • Sprinkle each slice generously with Parmesan (and breadcrumbs, if using).

  4. Bake:

    • Bake for 20–25 minutes or until squash is tender and the tops are golden and slightly crispy.

    • If you want a crispier top, broil for the last 1–2 minutes, but watch closely.

  5. Serve:

    • Garnish with chopped parsley or a light squeeze of lemon juice for brightness.


🍽️ Tips & Variations:

  • Zucchini works too – or mix with yellow squash for color variety.

  • Add a pinch of crushed red pepper flakes for a spicy kick.

  • Serve alongside grilled meats, fish, or as a low-carb appetizer.
