Air Fryer Stuffed Mushrooms

Ingredients

  • 12 large white or cremini mushrooms, stems removed and finely chopped
  • 2 tablespoons olive oil (divided)
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup breadcrumbs (panko works great)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup cream cheese, softened
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon dried oregano or Italian seasoning
  • Salt and pepper, to taste
  • Optional: cooked and crumbled bacon or sausage for extra flavor

Instructions

Step 1: Prep the mushrooms

  • Clean mushrooms gently with a damp paper towel. Remove stems carefully and finely chop them to use in the filling.

Step 2: Make the filling

  • Heat 1 tablespoon olive oil in a skillet over medium heat.
  • Add chopped mushroom stems, onion, and garlic. Sauté until softened and fragrant (about 4-5 minutes).
  • Remove from heat and stir in breadcrumbs, Parmesan, cream cheese, parsley, oregano, salt, and pepper. Mix well until combined.
  • If using bacon or sausage, stir it in now.

Step 3: Stuff the mushrooms

  • Brush mushroom caps with remaining olive oil.
  • Spoon the filling generously into each mushroom cap, pressing lightly to pack it.

Step 4: Air fry

  • Preheat your air fryer to 350°F (175°C).
  • Place the stuffed mushrooms in the air fryer basket in a single layer.
  • Air fry for 8-10 minutes, or until the mushrooms are tender and the tops are golden brown.

Step 5: Serve

  • Garnish with extra parsley or a sprinkle of Parmesan, and serve warm.

Tips

  • Don’t overcrowd the basket; cook in batches if needed.
  • Add some chopped spinach or sun-dried tomatoes to the filling for a twist.
  • Serve with a dipping sauce like garlic aioli or marinara.
