Oh wow, Loaded Cowboy BBQ Tater Tot Nachos are next-level comfort food — crispy, cheesy, smoky, and downright irresistible. Perfect for game day, potlucks, or when you just want to treat yourself. Here’s a bold, flavor-packed recipe:


🤠 Loaded Cowboy BBQ Tater Tot Nachos

Ingredients:

  • 1 (32 oz) bag frozen tater tots
  • 2 cups cooked pulled pork or shredded rotisserie chicken
  • 1/2 cup BBQ sauce (sweet & smoky works best)
  • 1 1/2 cups shredded cheddar or a cheddar-jack blend
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn (fresh, canned, or frozen)
  • 1/4 cup red onion, finely diced
  • 1-2 jalapeños, sliced (optional)
  • 4-6 slices cooked bacon, chopped
  • Sour cream, for topping
  • Diced avocado or guacamole, for topping
  • Chopped green onions and/or cilantro, for garnish

Instructions:

  1. Bake the tater tots according to package instructions until golden and crispy. (Crispiness is key — don’t underbake!)
  2. While they bake, mix pulled pork or chicken with BBQ sauce in a skillet and warm through.
  3. Once tots are done, transfer them to a large oven-safe skillet or baking sheet lined with parchment paper.
  4. Layer on the toppings:
    • BBQ meat
    • Black beans
    • Corn
    • Red onion
    • Jalapeños
    • Bacon
    • Cheese (lots of it!)
  5. Broil on high for 2–4 minutes, just until the cheese is melted and bubbly.
  6. Top it off with sour cream, diced avocado or guac, green onions, and cilantro.
  7. Serve immediately and watch them disappear!

Tip:

You can also drizzle extra BBQ sauce or ranch over the top just before serving.
