🤠 Loaded Cowboy BBQ Tater Tot Nachos
Ingredients:
- 1 (32 oz) bag frozen tater tots
- 2 cups cooked pulled pork or shredded rotisserie chicken
- 1/2 cup BBQ sauce (sweet & smoky works best)
- 1 1/2 cups shredded cheddar or a cheddar-jack blend
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn (fresh, canned, or frozen)
- 1/4 cup red onion, finely diced
- 1-2 jalapeños, sliced (optional)
- 4-6 slices cooked bacon, chopped
- Sour cream, for topping
- Diced avocado or guacamole, for topping
- Chopped green onions and/or cilantro, for garnish
Instructions:
- Bake the tater tots according to package instructions until golden and crispy. (Crispiness is key — don’t underbake!)
- While they bake, mix pulled pork or chicken with BBQ sauce in a skillet and warm through.
- Once tots are done, transfer them to a large oven-safe skillet or baking sheet lined with parchment paper.
- Layer on the toppings:
- BBQ meat
- Black beans
- Corn
- Red onion
- Jalapeños
- Bacon
- Cheese (lots of it!)
- Broil on high for 2–4 minutes, just until the cheese is melted and bubbly.
- Top it off with sour cream, diced avocado or guac, green onions, and cilantro.
- Serve immediately and watch them disappear!
Tip:
You can also drizzle extra BBQ sauce or ranch over the top just before serving.
