🧂 Ingredients:

For the Crab Cake Filling:

  • 1 cup lump crab meat (picked over for shells)
  • ¼ cup mayonnaise
  • 1 egg
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ½ tsp Old Bay seasoning
  • ¼ tsp garlic powder
  • ½ cup breadcrumbs (panko or regular)
  • 2 tbsp green onions, finely chopped
  • 2 tbsp red bell pepper, finely diced (optional for color and crunch)
  • Salt and pepper to taste

For Assembly:

  • 8 egg roll wrappers
  • Small bowl of water (for sealing wrappers)
  • Oil for frying (vegetable or canola)

For the Lemon Dip:

  • ½ cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • Optional: a pinch of cayenne or paprika

🍳 Instructions:

1. Make the Crab Cake Mixture

  • In a bowl, combine mayonnaise, egg, mustard, Worcestershire, and seasonings. Mix well.
  • Gently fold in the crab meat, breadcrumbs, green onions, and bell pepper.
  • Chill in the fridge for 10–15 minutes to firm up.

2. Assemble the Egg Rolls

  • Lay an egg roll wrapper in a diamond shape. Add 2–3 tablespoons of crab mixture in the center.
  • Fold the bottom point over the filling, then the sides, and roll tightly toward the top. Seal with a dab of water.
  • Repeat with the remaining wrappers.

3. Fry Until Crispy

  • Heat oil (about 2 inches deep) in a skillet or deep fryer to 350°F (175°C).
  • Fry egg rolls 2–3 at a time for 3–4 minutes, turning occasionally, until golden brown and crispy.
  • Remove and drain on paper towels.

4. Make the Lemon Dip

  • In a small bowl, whisk together mayo, lemon juice, zest, Dijon, and seasonings.
  • Chill until ready to serve.

📝 Tips & Variations:

  • Air Fryer Option: Spray with oil and cook at 375°F (190°C) for 10–12 minutes, flipping halfway.
  • Add a little hot sauce or jalapeño to the filling for heat.
  • Substitute with shrimp or imitation crab if needed.
  • Want a sweeter twist? Mix in a spoonful of sweet chili sauce with the dip.
