- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3–4 small boxes (3 oz) of Jello powder in different flavors (e.g., strawberry, lemon, lime, berry blue)
- Optional: food coloring to enhance pastel tones

- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and sugar in a large bowl until light and fluffy (2–3 minutes). Add egg and vanilla; mix well.
- Mix dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
- Divide dough evenly into 3 or 4 bowls (one per Jello flavor).
- Add Jello powder (~2 tbsp per bowl) and mix into each dough portion. Add a drop of matching food coloring if desired.
- Form balls (~1 inch), roll in extra Jello powder or sugar for sparkle.
- Place on baking sheet about 2 inches apart. Flatten slightly with the bottom of a glass or your palm.
- Bake for 8–10 minutes—edges should be set, but centers slightly soft.
- Cool on sheet for 5 minutes, then transfer to a wire rack.
