Grilled chicken with fish sauce

Here’s a basic recipe idea:

Ingredients:

  • 2 lbs (900g) boneless chicken thighs or breasts

  • 2 tbsp fish sauce (e.g., Red Boat, Squid brand)

  • 1 tbsp soy sauce

  • 1 tbsp brown sugar or honey

  • 1 tbsp lime juice

  • 1–2 cloves garlic, minced

  • 1 small chili (optional), finely chopped

  • 1 tsp black pepper

  • 1 tbsp vegetable oil

Instructions:

  1. Marinate the chicken:

    • In a bowl, mix fish sauce, soy sauce, sugar, lime juice, garlic, chili, pepper, and oil.

    • Add chicken and coat thoroughly. Marinate for at least 30 minutes (or up to 8 hours in the fridge).

  2. Grill the chicken:

    • Preheat grill to medium-high.

    • Grill chicken for about 5–7 minutes per side, depending on thickness, until charred and fully cooked (internal temp 165°F / 74°C).

  3. Serve:

    • Let rest for a few minutes, then slice.

    • Great with jasmine rice, pickled vegetables, or a fresh herb salad.
