Flourless Peanut Butter Cookies

These cookies are rich, chewy, and full of flavor, and they only require a few ingredients.

Ingredients:

  • 1 cup peanut butter (smooth or crunchy)
  • 1/2 cup sugar (white sugar or brown sugar)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda (optional for a slightly lighter texture)
  • A pinch of salt (optional, especially if you’re using unsweetened peanut butter)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

  2. Mix Ingredients: In a medium-sized bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda (if using), and salt (if using). Stir until the mixture is smooth and fully combined.

  3. Shape the Dough: Use a tablespoon or cookie scoop to form dough balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. You can gently flatten them with a fork, creating the classic peanut butter cookie crisscross pattern.

  4. Bake: Bake the cookies for 8-10 minutes, or until the edges are slightly golden and the centers are set. They may appear soft when you first take them out of the oven, but they will firm up as they cool.

  5. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.


Optional Variations:

  • Add chocolate chips: You can mix in 1/2 cup of chocolate chips or chunks for a chocolatey twist.
  • Add an extra flavor: Try adding a sprinkle of cinnamon or a handful of chopped nuts for more texture and flavor.
