Cheesy Hashbrown Casserole

Ingredients:

  • 1 (30 oz) bag frozen hashbrowns (thawed)

  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom for a vegetarian version)

  • 1/2 cup sour cream

  • 1/2 cup melted butter

  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella for extra creaminess)

  • 1 small onion, finely chopped (optional)

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

  • 1/2 cup crushed cornflakes (or breadcrumbs) for topping (optional)

  • 1 tbsp butter (for topping)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.

  2. Mix the Casserole Ingredients:

    • In a large bowl, combine the thawed hashbrowns, cream of chicken soup, sour cream, melted butter, and shredded cheddar cheese.

    • If using, add the chopped onion and garlic powder. Stir everything together until well combined.

    • Season with salt and pepper to taste.

  3. Assemble the Casserole:

    • Spread the hashbrown mixture evenly into the prepared baking dish.

    • If you’re using crushed cornflakes or breadcrumbs, sprinkle them evenly over the top of the casserole for a crunchy topping.

    • Dot the top of the casserole with small pieces of butter (about 1 tablespoon) to help the topping crisp up.

  4. Bake:

    • Place the casserole in the preheated oven and bake for about 45-50 minutes, or until the top is golden brown and the casserole is bubbling around the edges.

  5. Serve:

    • Remove from the oven and let it sit for a few minutes before serving. This allows the casserole to firm up a little bit for easier serving.

Tips:

  • Cheese Variations: Feel free to use different types of cheese like Monterey Jack, pepper jack, or Colby cheese for variations in flavor.

  • Make Ahead: You can assemble the casserole a day ahead and refrigerate it before baking. Just add a few extra minutes to the baking time if it’s cold from the fridge.

  • For a Crunchier Topping: Use more cornflakes or even crushed potato chips for a different texture on top.
