No-Bake Pecan Pie Balls
Ingredients:

1 cup pecans, finely chopped

1 cup pitted dates (about 10-12 dates)

1/4 cup maple syrup (or honey)

1/4 cup rolled oats (optional for texture)

1/4 cup unsweetened shredded coconut (optional, for coating)
Instructions:

Prepare the Dates: If the dates are not soft or are a bit dry, soak them in warm water for 10-15 minutes to soften them up. Then drain and pat dry.

Process the Ingredients: In a food processor, add the dates, chopped pecans, maple syrup, vanilla extract, cinnamon, and salt. If you’re using oats for texture, add them to the mixture as well. Pulse everything together until it forms a sticky, dough-like consistency. You may need to stop and scrape down the sides a few times.

Form the Balls: Once the mixture is combined, take about 1 tablespoon of the mixture and roll it into a ball with your hands. If the mixture feels too sticky, dampen your hands slightly with water or lightly coat them with a bit of oil.

Coat the Balls (optional): For added flavor and texture, roll each ball in shredded coconut. This step is optional but adds a nice touch!

Chill: Place the pecan pie balls on a tray lined with parchment paper. Refrigerate them for at least 30 minutes to set and firm up.
