Pancake Sausage Casserole

Here’s a fun and delicious recipe for a Pancake Sausage Casserole—a great breakfast or brunch dish that combines savory sausage with sweet pancakes in one easy-to-make casserole!

Ingredients:

  • 1 pound breakfast sausage (ground)

  • 6 large eggs

  • 2 cups milk

  • 2 cups pancake mix (or 1 ½ cups self-rising flour + 1 tablespoon sugar + 1 teaspoon baking powder)

  • 1/4 cup melted butter

  • 1/4 cup maple syrup (optional, for a touch of sweetness)

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon cinnamon (optional, for extra flavor)

  • 1/2 cup shredded cheese (optional, cheddar or your favorite cheese)

  • 1/2 cup maple syrup (for serving)

Instructions:

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray or butter.

  2. Cook the Sausage
    In a skillet over medium heat, cook the sausage until browned and crumbled. Use a spoon to break up the sausage as it cooks. Once fully cooked, drain any excess grease and set aside.

  3. Make the Pancake Batter
    In a large bowl, whisk together the eggs, milk, pancake mix (or flour, sugar, and baking powder), melted butter, maple syrup (optional), vanilla extract, salt, pepper, and cinnamon (if using). Mix until smooth and combined.

  4. Assemble the Casserole
    Spread the cooked sausage evenly across the bottom of the greased baking dish. Pour the pancake batter over the sausage, spreading it evenly. If you want to add cheese, sprinkle it over the top of the casserole.

  5. Bake
    Bake the casserole in the preheated oven for 30-35 minutes, or until the center is set and the top is lightly golden brown. A toothpick inserted into the center should come out clean.

  6. Serve
    Let the casserole cool for a few minutes before slicing. Serve with extra maple syrup for drizzling on top.
