Potato and Meatloaf Casserole is a comforting, hearty dish that combines tender potatoes with a flavorful meatloaf, all baked together into a satisfying casserole. Here’s a recipe for you to try:

Ingredients:

  • 1 lb ground beef (or a mix of beef and pork for extra flavor)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4-5 medium potatoes, peeled and sliced thinly
  • 2 tablespoons olive oil (for the potatoes)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup ketchup (for topping)
  • 1 tablespoon brown sugar (optional, for the ketchup topping)
  • Fresh parsley, chopped (optional for garnish)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the meatloaf mixture:
    • In a large bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, dried oregano, thyme, salt, and pepper. Mix until well combined.
    • Shape the mixture into a loaf and set aside.
  3. Prepare the potatoes:
    • In a bowl, toss the sliced potatoes with olive oil and a pinch of salt and pepper.
    • Layer the sliced potatoes evenly in the bottom of a greased 9×13-inch casserole dish.
  4. Add the meatloaf:
    • Place the meatloaf mixture on top of the layer of potatoes, pressing it down gently to cover the potatoes evenly.
  5. Make the topping:
    • In a small bowl, mix the ketchup with the brown sugar (if using). Spread this mixture over the top of the meatloaf.
  6. Bake the casserole:
    • Cover the casserole with foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 20-30 minutes until the meatloaf is fully cooked (internal temperature should reach 160°F or 71°C) and the potatoes are tender when pierced with a fork.
  7. Add the cheese:
    • In the last 10 minutes of baking, sprinkle the shredded cheese over the top of the casserole and return it to the oven until the cheese is melted and bubbly.
  8. Serve:
    • Remove the casserole from the oven and let it rest for a few minutes. Garnish with fresh parsley (if desired), slice, and serve!
