Blackberry Cake

Here’s a delicious Blackberry Cake recipe that combines the natural sweetness of blackberries with a light and fluffy cake base. It’s perfect for any occasion!

Ingredients:

For the cake:

  • 1 1/2 cups fresh blackberries (you can use frozen if fresh isn’t available)

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 1/2 cups granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup buttermilk (or regular milk)

  • 1 tablespoon lemon zest (optional for added flavor)

For the frosting:

  • 8 oz cream cheese, softened

  • 1/4 cup unsalted butter, softened

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract

  • 2-3 tablespoons blackberry puree (blend a handful of blackberries for this)

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or you can use one 9×13 pan).

2. Prepare the Blackberries:

  • Mash about 1/2 cup of the blackberries to create a puree. Set aside.

  • Optionally, you can also reserve a few whole blackberries for garnish later.

3. Make the Cake Batter:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  • In a large bowl, cream together the butter and sugar until light and fluffy (about 3-5 minutes). You can use an electric mixer for this.

  • Add the eggs one at a time, beating well after each addition, and then add the vanilla extract and lemon zest (if using).

  • Gradually mix in the dry ingredients in batches, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.

  • Gently fold in the blackberry puree.

4. Bake the Cake:

  • Divide the batter evenly between the prepared cake pans.

  • Bake for 25-30 minutes (for 9-inch pans) or until a toothpick inserted into the center comes out clean.

  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

5. Prepare the Frosting:

  • While the cake is cooling, make the frosting. Beat together the softened cream cheese and butter until smooth and creamy.

  • Gradually add the powdered sugar, 1/2 cup at a time, mixing well after each addition.

  • Stir in the vanilla extract and blackberry puree, and mix until smooth and well combined. Add more blackberry puree to achieve the desired flavor and consistency.

6. Assemble the Cake:

  • Once the cakes are fully cooled, spread frosting on top of the first layer of cake.

  • Place the second cake layer on top and frost the top and sides of the entire cake with the cream cheese frosting.

  • Garnish with whole blackberries, if desired.

7. Serve:

  • Slice the cake and serve chilled or at room temperature.
