Roasted sweet potato

Roasted Sweet Potatoes are simple to make and packed with flavor. They have a natural sweetness that caramelizes when roasted, creating a delicious side dish or snack. Here’s an easy recipe:

Ingredients:

  • 2-3 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika (optional)
  • Salt and pepper, to taste
  • Fresh parsley or cilantro (optional, for garnish)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 425°F (220°C).

2. Prepare the Sweet Potatoes:

  • Peel the sweet potatoes and cut them into 1-inch cubes. You can also leave the skin on if you prefer.

3. Season the Sweet Potatoes:

  • In a large bowl, toss the sweet potato cubes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

4. Roast the Sweet Potatoes:

  • Spread the seasoned sweet potatoes on a baking sheet in a single layer, ensuring they’re not crowded (this helps them roast evenly).
  • Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and golden brown on the edges.

5. Serve:

  • Once roasted, garnish with some fresh parsley or cilantro if desired.
  • Serve hot as a side dish, or enjoy them on their own with a drizzle of honey, a sprinkle of cinnamon, or a squeeze of lime.

Tips:

  • Variation: Try adding a pinch of cayenne pepper or chili powder for a bit of heat.
  • For crispy edges: Make sure the sweet potatoes are in a single layer, and flip them halfway through roasting to ensure even crispness.
  • Storage: Leftover roasted sweet potatoes can be stored in the fridge for 3-4 days and reheated in the oven or microwave.
