Carrot and Apple Oatmeal Cake

A Carrot and Apple Oatmeal Cake sounds delicious! Here’s a simple recipe you can follow:

Ingredients:

  • 1 cup rolled oats

  • 1/2 cup milk (or dairy-free milk like almond or oat milk)

  • 1/2 cup grated carrots (about 2 medium carrots)

  • 1/2 cup apple, peeled and grated (about 1 medium apple)

  • 1/2 cup all-purpose flour (you can use whole wheat flour for a healthier option)

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg (optional)

  • 1/4 tsp salt

  • 1/4 cup honey or maple syrup (or another sweetener of choice)

  • 1/4 cup vegetable oil (or melted coconut oil)

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/4 cup chopped walnuts or pecans (optional, but adds a nice crunch)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease or line an 8-inch round cake pan or an 8×8-inch square pan with parchment paper.

  2. Prepare the oats: In a bowl, combine the rolled oats and milk. Let them soak for about 5–10 minutes to soften.

  3. Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  4. Prepare wet ingredients: In a large mixing bowl, beat the eggs, honey (or maple syrup), oil, and vanilla extract together until smooth.

  5. Combine: Stir the soaked oats into the wet ingredients. Then, add the grated carrots, apple, and chopped nuts (if using). Mix everything together until fully incorporated.

  6. Fold in dry ingredients: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Do not overmix.

  7. Bake: Pour the batter into the prepared cake pan and spread it out evenly. Bake for about 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool and serve: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, you can serve it as is or frost it with a simple cream cheese frosting for extra flavor.
