Beef Noodle Casserole is a comforting, hearty dish that combines seasoned ground beef, tender noodles, creamy sauce, and cheese—making it a perfect meal for family dinners or potlucks. Here’s a simple and delicious recipe to try:

Beef Noodle Casserole Recipe

Ingredients:

  • 1 lb ground beef

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

  • 1 cup sour cream

  • 1 cup beef broth (or water)

  • 8 oz egg noodles (or any pasta you prefer)

  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)

  • 1 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • 1/2 teaspoon salt (or to taste)

  • 1/4 teaspoon black pepper

  • 1 tablespoon olive oil (for cooking)

  • Chopped parsley (for garnish, optional)


Instructions:

1. Cook the Noodles:

  • Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions (usually 7-8 minutes), until al dente.

  • Drain the noodles and set them aside.

2. Prepare the Beef Mixture:

  • In a large skillet, heat the olive oil over medium heat.

  • Add the diced onion and cook for 3-4 minutes, until softened.

  • Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked, about 6-8 minutes. Drain any excess fat.

  • Add the minced garlic and cook for another minute, until fragrant.

3. Make the Sauce:

  • To the beef mixture, add the cream of mushroom soup, sour cream, and beef broth. Stir everything together until well combined.

  • Season with oregano, basil, salt, and pepper. Taste and adjust seasonings if needed.

  • Simmer the sauce on low heat for about 5 minutes, stirring occasionally, until everything is heated through and the sauce thickens slightly.

4. Assemble the Casserole:

  • Preheat your oven to 350°F (175°C).

  • In a large mixing bowl, combine the cooked noodles with the beef mixture. Stir in 1 1/2 cups of shredded cheese (reserve the remaining 1/2 cup for topping).

  • Pour the mixture into a greased 9×13-inch baking dish, spreading it out evenly.

5. Bake the Casserole:

  • Sprinkle the remaining 1/2 cup of shredded cheese over the top of the casserole.

  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is hot throughout.

6. Garnish and Serve:

  • Remove from the oven and let the casserole sit for a few minutes to set.

  • Garnish with chopped parsley if desired and serve hot!


Tips:

  • Add Veggies: To make the casserole even more nutritious, you can add vegetables like peas, carrots, or spinach to the beef mixture.

  • Different Cheese: Feel free to experiment with different types of cheese, like mozzarella, Parmesan, or provolone, for a unique flavor.

  • Make-Ahead: You can prepare this casserole in advance and refrigerate it (before baking) for up to 24 hours. Just bake it when you’re ready to serve.

  • Freezing: This casserole freezes well. Simply assemble it, cover tightly with foil, and freeze. When ready to bake, just thaw in the refrigerator overnight and bake as directed.
