A savory potato pancake with a creamy yogurt sauce is a delicious and satisfying dish. Here’s a recipe to make it:

Savory Potato Pancakes:

Ingredients:

  • 4 medium potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 eggs
  • 1/4 cup all-purpose flour (you can use gluten-free flour if preferred)
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley or dill (optional for garnish)
  • Olive oil or vegetable oil for frying

Instructions:

  1. Prepare the Potatoes: Grate the potatoes using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step helps the pancakes crisp up.

  2. Mix the Ingredients: In a large mixing bowl, combine the grated potatoes, chopped onion, eggs, flour, baking powder, garlic powder, salt, and pepper. Mix until well combined.

  3. Heat the Oil: Heat a couple of tablespoons of oil in a large skillet over medium heat. Make sure the oil is hot but not smoking.

  4. Cook the Pancakes: Scoop about 2 tablespoons of the potato mixture and form it into a small patty. Place it in the skillet and flatten it slightly. Cook the pancakes for 3-4 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary.

  5. Drain the Pancakes: Once cooked, transfer the pancakes to a plate lined with paper towels to drain excess oil.


Creamy Yogurt Sauce:

Ingredients:

  • 1 cup plain Greek yogurt (for a thicker, creamier sauce)
  • 1 tbsp lemon juice
  • 1 tsp garlic, finely minced (or garlic powder)
  • 1 tbsp fresh dill or parsley, chopped (optional)
  • Salt and pepper, to taste
  • 1-2 tsp olive oil (optional, for richness)

Instructions:

  1. In a small bowl, mix together the Greek yogurt, lemon juice, garlic, and olive oil (if using). Stir until smooth and creamy.

  2. Season the sauce with salt and pepper to taste. If you’d like, add in the fresh dill or parsley for extra flavor.


Serve:

Serve the savory potato pancakes hot with a generous dollop of the creamy yogurt sauce on top or on the side for dipping. Garnish with extra herbs if desired.
