Chicken Steak and Shrimp Rice Bowl Recipe

Ingredients:

For the Chicken Steak:

  • 2 boneless skinless chicken breasts (or thighs, if preferred)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (optional for extra flavor)
  • Salt and pepper to taste
  • 1 tbsp fresh lemon juice (optional for extra freshness)

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil or butter
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp fresh lemon juice (optional)

For the Rice:

  • 1 cup jasmine or basmati rice (you can also use brown rice or a rice blend)
  • 2 cups chicken broth or water
  • 1 tbsp olive oil or butter
  • Salt to taste
  • 1/2 tsp garlic powder (optional)

For Toppings (Optional):

  • Sliced avocado
  • Chopped cilantro
  • Sriracha or spicy mayo (for a kick)
  • Sliced green onions
  • Lime wedges

Instructions:

  1. Cook the Rice:

    • In a medium saucepan, heat 1 tablespoon of olive oil or butter over medium heat. Add 1/2 tsp garlic powder (optional) and sauté for 30 seconds.
    • Add the rice, followed by 2 cups of chicken broth (or water). Bring it to a boil.
    • Once boiling, reduce the heat to low, cover, and let the rice simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
    • Remove from heat and fluff with a fork.
  2. Cook the Chicken Steak:

    • While the rice is cooking, season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
    • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
    • Add the chicken breasts and cook for about 5-7 minutes per side, depending on thickness, until they reach an internal temperature of 165°F (75°C) and are golden brown.
    • Once cooked, let the chicken rest for a few minutes before slicing it into thin strips. Optionally, drizzle with a little fresh lemon juice for extra flavor.
  3. Cook the Shrimp:

    • Season the shrimp with paprika, garlic powder, salt, and pepper.
    • In the same skillet (you can use the same one after cooking the chicken), heat 1 tablespoon of olive oil or butter over medium-high heat.
    • Add the shrimp and cook for about 2-3 minutes per side, or until they turn pink and opaque.
    • Optional: Squeeze fresh lemon juice over the shrimp after cooking.
  4. Assemble the Rice Bowl:

    • Start with a base of cooked rice in each bowl.
    • Arrange the sliced chicken steak and cooked shrimp on top of the rice.
    • Add any desired toppings, such as avocado, cilantro, sliced green onions, lime wedges, or a drizzle of sriracha/spicy mayo.
  5. Serve:

    • Serve immediately and enjoy your flavorful Chicken Steak and Shrimp Rice Bowl!

Tips:

  • You can make this dish even more customizable by adding sautéed vegetables like bell peppers, onions, or zucchini.
