🍛 Slow-Cooked Beef Rogan Josh Curry

A Kashmiri-style curry with warming spices and melt-in-the-mouth beef.


🥩 Ingredients (Serves 4–6)

For the Beef Curry:

  • 800g (1.75 lbs) beef chuck or stewing beef, cut into chunks
  • 2 tbsp vegetable oil or ghee
  • 1 large onion, finely sliced
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 2 tbsp Rogan Josh curry paste (store-bought or homemade – see below)
  • 1 tsp ground cumin
  • 1 tsp paprika (smoked or sweet)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom (optional)
  • 2 tbsp tomato purée (paste)
  • 1 can (400g) chopped tomatoes
  • 1/2 cup plain yogurt or 1/4 cup cream (adds richness)
  • 1 cup beef stock
  • Salt to taste
  • Fresh coriander to garnish

Optional Whole Spices (for more depth):

  • 1 bay leaf
  • 2 green cardamom pods
  • 1 small cinnamon stick

🧑‍🍳 Instructions

1. Sear the Beef:

  • Heat oil/ghee in a large heavy-based pot or slow cooker insert.
  • Brown the beef in batches. Set aside.

2. Sauté Aromatics:

  • In the same pan, add onions. Cook until soft and golden (about 10 minutes).
  • Add garlic and ginger. Cook for another minute.
  • Stir in the curry paste, cumin, paprika, cinnamon, cardamom, and tomato purée.
  • Cook until fragrant and the oil starts to separate (~2 mins).

3. Build the Curry Base:

  • Add the chopped tomatoes, beef stock, and yogurt (or cream).
  • Return the beef to the pot. Stir everything together.

4. Slow Cook:

  • Oven method: Cover and cook in a 150°C (300°F) oven for 2.5 to 3 hours.
  • Slow cooker: Cook on low for 6–8 hours.
  • Stovetop: Simmer on very low, covered, for 2.5 hours, stirring occasionally.

5. Finish:

  • Once the beef is fall-apart tender, adjust salt and spice levels.
  • Optional: Reduce sauce uncovered for 10–15 minutes if it’s too thin.
  • Garnish with fresh coriander.

🍚 Lemon & Garlic-Infused Boiled Rice with Coriander


🍋 Ingredients:

  • 1.5 cups basmati rice
  • 3 cups water (or stock)
  • 2 cloves garlic, minced or lightly smashed
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • Salt to taste
  • 1 tbsp butter or oil
  • 1/4 cup fresh coriander, finely chopped

🍚 Instructions:

1. Rinse & Soak Rice:

  • Rinse basmati rice under cold water until water runs clear.
  • Optional: soak for 15–20 minutes for fluffier grains. Drain before cooking.

2. Boil with Flavour:

  • In a saucepan, bring water to a boil.
  • Add garlic, lemon zest, salt, and rice.
  • Reduce heat to low, cover with a tight lid, and simmer for 12–15 minutes until water is absorbed.

3. Finish & Fluff:

  • Turn off heat. Let sit covered for 5 minutes.
  • Add lemon juice, butter/oil, and coriander.
  • Fluff with a fork before serving.

🥄 To Serve:

Plate the beef rogan josh beside a mound of lemon & garlic rice, spoon over some sauce, and scatter with fresh coriander. Serve with:

  • Warm naan or roti
  • Cooling yogurt raita
  • A fresh cucumber salad or pickled onions
