- 1 Β½ lbs boneless skinless chicken breasts or thighs
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 cup long-grain white rice (uncooked)
- 1 medium onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (with juices)
- 2 cups chicken broth
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- Β½ tsp cayenne pepper (optional, for heat)
- Salt and pepper, to taste
- 1 Β½ cups shredded cheddar cheese or Monterey Jack
- 2 tbsp olive oil or butter
- Fresh parsley or green onions, chopped (for garnish)
