🍫 Fluffy Chocolate Heart Mousse Cake

🍽️ Serves: 6-8

⏱️ Time: 1.5 hours (including chilling)


📝 Ingredients:

For the chocolate mousse:

  • 6 oz (170g) good-quality dark chocolate (70% cocoa recommended)
  • 3 large eggs, separated
  • ¼ cup granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

For the base (optional):

  • 1 cup crushed cookies or brownie crumbs
  • 3 tbsp melted butter

👩‍🍳 Instructions:

1. Make the base (optional):

  • Mix crushed cookies or brownie crumbs with melted butter.
  • Press into the bottom of a heart-shaped springform pan or mold.
  • Chill in fridge while you make the mousse.

2. Prepare the chocolate mousse:

  • Melt chocolate gently over a double boiler or in the microwave (in 20-sec bursts), stir until smooth. Let cool slightly.
  • Whip egg whites with a pinch of salt until soft peaks form.
  • Gradually add sugar and whip to stiff, glossy peaks.
  • In another bowl, whip heavy cream and vanilla to soft peaks.
  • Stir egg yolks into the melted chocolate quickly.
  • Fold whipped cream gently into the chocolate mixture.
  • Carefully fold in the egg whites in 2 batches, maintaining the fluffiness.

3. Assemble & chill:

  • Pour mousse over the chilled base in the mold.
  • Smooth the top with a spatula.
  • Refrigerate at least 4 hours or overnight until set.

4. Decorate & serve:

  • Remove from mold carefully.
  • Dust with cocoa powder or powdered sugar.
  • Garnish with fresh berries, edible flowers, or chocolate shavings.

💡 Tips:

  • Use a heart-shaped mold or simply shape with a spatula on a plate for a rustic look.
  • You can swap dark chocolate for milk chocolate if you prefer it sweeter.
  • For a vegan option, try avocado-based mousse or aquafaba instead of eggs and cream.
