✅ Ingredients (Serves 2)

For the Lobster:

  • 2 lobster tails (about 5–6 oz each), thawed if frozen
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Paprika (optional, for color)

For the Garlic Cream Sauce:

  • 2 tbsp butter
  • 3–4 cloves garlic, minced
  • ½ cup dry white wine (or seafood/chicken broth)
  • ¾ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • Chopped parsley, for garnish
  • Optional: pinch of crushed red pepper or thyme

🔪 Instructions

1. Prep the Lobster Tails

  • Using kitchen scissors, cut through the top of the lobster shell lengthwise, from the base to the tail tip.
  • Gently lift the meat up and out of the shell, keeping it attached at the base. Rest the meat on top of the shell (“piggyback style”).
  • Season with salt, pepper, and a little paprika if desired.

2. Sear the Lobster

  • Heat 2 tbsp butter + 1 tbsp olive oil in a large skillet over medium-high heat.
  • Once hot and foamy, add lobster tails meat-side down. Sear for about 2–3 minutes, until golden.
  • Flip and cook the shell side for another 2–3 minutes, spooning butter over the top as it cooks.
  • Remove lobster and tent with foil to keep warm.

3. Make the Garlic Cream Sauce

  • In the same skillet, reduce heat to medium and add 2 tbsp butter.
  • Sauté garlic for 1 minute until fragrant.
  • Deglaze the pan with white wine; simmer 2–3 minutes to reduce.
  • Stir in cream and Parmesan, and let it simmer until slightly thickened (about 3–5 minutes).
  • Add lemon juice, adjust seasoning with salt, pepper, or red pepper flakes.

4. Serve

  • Spoon the garlic cream sauce onto plates or over the lobster tails.
  • Garnish with chopped parsley and a wedge of lemon.

🍽️ Serving Suggestions

  • Over a bed of creamy mashed potatoes, angel hair pasta, or risotto
  • Alongside steamed asparagus or garlic green beans
  • With crusty bread to soak up the sauce
