🍊 Cranberry & Queso Blanco Flatbread with Orange-Honey Vinaigrette

🫓 Ingredients (Serves 2–4):

For the flatbread:

  • 2 flatbreads or naan (store-bought or homemade)
  • 1 cup shredded mozzarella (or mild white cheese)
  • 1/2 cup crumbled queso blanco (or substitute with feta or queso fresco)
  • 1/3 cup dried cranberries (or fresh cranberries roasted until soft)
  • 1 tbsp olive oil
  • Optional: 2 tbsp thinly sliced red onion or shallots
  • Optional: fresh arugula or baby greens (for topping after baking)

For the orange-honey vinaigrette:

  • 2 tbsp fresh orange juice
  • 1 tsp orange zest
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp white wine vinegar or apple cider vinegar
  • Pinch of salt and black pepper

🔪 Instructions:

1. Preheat Oven

Preheat your oven to 425°F (220°C). Place a baking sheet or pizza stone inside to heat up.

2. Assemble Flatbreads

  • Brush flatbreads lightly with olive oil.
  • Sprinkle with shredded mozzarella.
  • Add crumbled queso blanco evenly.
  • Sprinkle cranberries and sliced onion (if using) on top.

3. Bake

  • Place flatbreads on the hot baking sheet or stone.
  • Bake for 8–10 minutes, or until cheese is melted and bubbly and edges are golden.

4. Make Orange-Honey Vinaigrette

  • While baking, whisk together orange juice, zest, honey, olive oil, vinegar, salt, and pepper until emulsified.

5. Finish & Serve

  • Remove flatbreads from the oven.
  • Drizzle with orange-honey vinaigrette.
  • Top with fresh arugula or microgreens (if using).
  • Slice and serve warm or at room temperature.
