🍫 Flaxseed Chocolate Avocado Cake

🧁 Ingredients:

Dry:

  • 1 cup whole wheat flour (or all-purpose)
  • 1/2 cup unsweetened cocoa powder
  • 1 tbsp ground flaxseed
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Wet:

  • 1 ripe avocado (mashed smooth)
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut oil (melted)
  • 1/2 cup almond milk (or other plant milk)
  • 2 tsp vanilla extract
  • 1 tbsp apple cider vinegar (helps with leavening)

Optional Add-ins:

  • 1/3 cup dark chocolate chips or chunks
  • 1/4 cup chopped nuts (e.g., walnuts or pecans)

🥣 Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease or line an 8×8″ square pan or a loaf pan.
  2. Mix Dry Ingredients:
    In a large bowl, whisk together flour, cocoa powder, ground flaxseed, baking soda, baking powder, and salt.
  3. Prepare Wet Mix:
    In another bowl, mash the avocado until very smooth (use a food processor if needed). Add maple syrup, melted coconut oil, almond milk, vanilla, and apple cider vinegar. Mix well.
  4. Combine:
    Pour the wet mixture into the dry ingredients. Stir until just combined — don’t overmix. Fold in chocolate chips or nuts if using.
  5. Bake:
    Pour batter into your prepared pan. Smooth the top and bake for 25–30 minutes, or until a toothpick inserted comes out mostly clean (a few moist crumbs are okay).
  6. Cool & Serve:
    Let cool completely before slicing. The texture improves after resting for a few hours.

  • For a more fudgy cake, slightly underbake and refrigerate before serving.
  • Add 2 tbsp espresso for a deeper chocolate flavor.
  • Frosting idea: Try a simple avocado cocoa frosting (avocado + cocoa powder + maple syrup blended until creamy).
  • Gluten-free? Use a 1:1 gluten-free flour blend.
