Here’s a delicious recipe for Mashed Potato Pancakes with Meat Filling — crispy on the outside, creamy inside, and packed with savory ground meat. A hearty, comforting dish perfect for any meal!


🥔🍖 Mashed Potato Pancakes with Meat Filling

Ingredients

For the Meat Filling:

  • 1 lb ground beef, pork, or a mix
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano or thyme
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

For the Mashed Potato Pancakes:

  • 3 cups mashed potatoes (leftover or freshly made, preferably cooled)
  • 1 large egg
  • ¼ cup all-purpose flour (plus more if needed)
  • 2–3 tbsp chopped fresh parsley or chives (optional)
  • Salt and pepper to taste
  • Vegetable oil or butter for frying

Instructions

1. Prepare the Meat Filling:

  • Heat oil in a skillet over medium heat.
  • Add onion and garlic; sauté until soft and fragrant (3–4 minutes).
  • Add ground meat, breaking it up with a spoon.
  • Cook until browned and cooked through.
  • Stir in paprika, oregano/thyme, salt, and pepper.
  • Remove from heat and set aside to cool slightly.

2. Make the Potato Pancake Batter:

  • In a large bowl, combine mashed potatoes, egg, flour, parsley, salt, and pepper.
  • Mix well; the batter should be thick but scoopable.
  • If too wet, add a little more flour.

3. Assemble Pancakes:

  • Take about ¼ cup of potato mixture and flatten it in your hand.
  • Place about 1 tablespoon of the meat filling in the center.
  • Carefully fold and shape the potato mixture around the meat to form a patty, sealing the meat inside.
  • Repeat with remaining mixture and filling.

4. Cook:

  • Heat oil or butter in a large skillet over medium heat.
  • Fry the patties for 4–5 minutes per side until golden brown and crispy.
  • Drain on paper towels.

Serving Suggestions:

  • Serve with sour cream or a spicy dipping sauce.
  • Great with a side salad or steamed veggies.
