Here’s a cozy, satisfying recipe for Stuffed Jacket Potatoes — baked potatoes with crispy skins and loaded with delicious fillings. Perfect as a main or hearty side, and totally customizable!


🥔 Stuffed Jacket Potatoes (Baked & Loaded)

🔹 Basic Ingredients:

  • 4 large russet potatoes or baking potatoes
  • 2 tbsp olive oil
  • Salt & pepper, to taste

🔹 Filling Base (Classic Cheesy Mash):

  • ½ cup sour cream or cream cheese
  • 2–3 tbsp butter
  • ½–1 cup shredded cheddar cheese
  • ¼ cup milk (optional, to loosen)
  • 2 tbsp chopped chives or green onions

🔥 Step-by-Step Instructions:

1. Bake the Potatoes:

  • Preheat oven to 400°F (200°C).
  • Scrub potatoes clean and prick them with a fork.
  • Rub with olive oil and sprinkle with salt.
  • Bake directly on oven rack or a tray for 50–60 minutes, until skins are crispy and a knife slides in easily.

2. Scoop & Mix Filling:

  • Let potatoes cool slightly, then cut a slit on top.
  • Scoop out most of the inside into a bowl, leaving a shell.
  • Mash the potato flesh with butter, sour cream, cheese, chives, salt & pepper.
  • Add milk if needed for creaminess.

3. Stuff & Finish:

  • Spoon the filling back into the potato shells, mounding it up.
  • Top with a bit more cheese if you like.
  • Return to oven at 375°F (190°C) for 10–15 minutes until golden and heated through.

🧀 Stuffing Variations:

🍗 Chicken & Bacon Ranch:

  • Add chopped grilled chicken, crispy bacon bits, and a spoon of ranch dressing.

🌽 Tex-Mex:

  • Mix in black beans, corn, salsa, and shredded pepper jack cheese.

🥦 Veggie Cheddar:

  • Stir in steamed broccoli, sautéed mushrooms, or spinach with sharp cheddar.

🐟 Tuna Melt:

  • Mix in canned tuna, a little mayo, diced red onion, and top with melted mozzarella.

🍳 Breakfast Style:

  • Add scrambled eggs, cooked sausage or bacon, and a sprinkle of hot sauce.

  • Great with a side salad, soup, or just on their own.
