Air Fryer Zucchini with Parmesan

Here’s a delicious and easy recipe for Air Fryer Zucchini with Parmesan — crispy, golden on the outside, tender inside, and packed with savory flavor. Perfect as a side dish or healthy snack!


🥒 Air Fryer Zucchini with Parmesan

Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch thick rounds or half-moons

  • 2 tablespoons olive oil

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder (optional)

  • Salt and freshly ground black pepper, to taste

  • 1/3 cup grated Parmesan cheese (freshly grated is best)

  • 1/3 cup breadcrumbs (panko for extra crunch, or regular)

  • Optional: chopped parsley or red pepper flakes for garnish


Instructions

  1. Prep the zucchini:

    • Wash and slice the zucchini into even pieces—either rounds or half-moons.

    • Pat them dry with a paper towel to reduce moisture (this helps with crisping).

  2. Season:

    • In a large bowl, toss zucchini with olive oil, garlic powder, onion powder, salt, and pepper.

  3. Add coating:

    • In a small bowl, mix together Parmesan and breadcrumbs.

    • Toss the seasoned zucchini slices in the Parmesan-breadcrumb mixture until well coated.

  4. Air fry:

    • Preheat your air fryer to 400°F (200°C) for 3 minutes.

    • Place zucchini in a single layer in the air fryer basket (cook in batches if needed).

    • Air fry for 8–10 minutes, shaking halfway through, until golden and crispy.

  5. Serve:

    • Sprinkle with extra Parmesan or parsley if desired.

    • Serve warm with a side of marinara, ranch, or garlic aioli for dipping.


Tips:

  • Want a low-carb version? Skip the breadcrumbs or use almond flour.

  • Add Italian seasoning for more herb flavor.

  • Don’t overcrowd the basket—air needs to circulate for max crisp.
