🍌🍯 Salted Caramel Banana Bread Recipe

✅ Ingredients

For the Banana Bread:

  • 3 ripe bananas, mashed
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted (or neutral oil)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Optional: 1/2 cup chopped walnuts or chocolate chips

For the Salted Caramel Sauce:

  • 1/2 cup granulated sugar
  • 3 Tbsp unsalted butter
  • 1/4 cup heavy cream
  • 1/2 tsp sea salt (adjust to taste)

👩‍🍳 Instructions

1. Make the Salted Caramel (can be made ahead):

  • In a saucepan over medium heat, melt the sugar, stirring constantly until it turns golden and smooth.
  • Add butter and stir until melted and combined.
  • Slowly whisk in cream (it will bubble!) and cook for 1 more minute.
  • Remove from heat and stir in salt. Let cool slightly before using.

2. Prepare the Banana Bread:

  • Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  • In a large bowl, whisk mashed bananas, sugars, melted butter, eggs, and vanilla until smooth.
  • In a separate bowl, whisk flour, baking soda, and salt.
  • Fold dry ingredients into the wet mix just until combined. Do not overmix.
  • Optional: Gently fold in nuts or chocolate chips.

3. Assemble:

  • Pour half the batter into the pan.
  • Drizzle a few spoonfuls of salted caramel over the batter.
  • Add remaining batter on top, and drizzle more caramel on top (you can swirl it with a knife for a marbled effect).
  • Reserve some caramel for serving.

4. Bake:

  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack.

5. Serve:

  • Drizzle with more caramel and a sprinkle of flaky sea salt just before serving.

🌟 Tips

  • Use very ripe bananas for best flavor and moisture.
  • Caramel can be made ahead and stored in the fridge for up to 2 weeks.
  • For an extra treat, serve warm with ice cream and more caramel.
