Ingredients:
3β4 medium cooked beets (roasted or boiled), peeled and diced
1 cup cucumber, sliced or diced
1/3 cup feta cheese, crumbled
2 tbsp fresh dill, chopped (or 1 tsp dried)
2 tbsp olive oil
1 tbsp red wine vinegar or lemon juice
Salt and pepper to taste

Instructions:
In a large bowl, combine the diced beets and cucumbers.
