Here’s a delicious Strawberry Cheesecake Crumble Cookies recipe inspired by Crumbl’s famous soft, thick cookies with a creamy, fruity twist. These cookies combine a buttery graham cracker base, cheesecake frosting, and strawberry topping.

Ingredients

For the Cookie Base:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2¾ cups all-purpose flour

  • 1¼ cups graham cracker crumbs (about 10 full sheets)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

For the Cheesecake Frosting:

  • 8 oz cream cheese, softened

  • ½ cup (1 stick) unsalted butter, softened

  • 2 cups powdered sugar

  • 1 tsp vanilla extract

For the Strawberry Topping:

  • 1 cup strawberries, chopped

  • 2 tbsp granulated sugar

  • 1 tsp lemon juice

  • 1 tsp cornstarch (optional, for thickening)


Instructions

1. Make the Cookies:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.

  3. Beat in eggs and vanilla.

  4. In a separate bowl, whisk together flour, graham cracker crumbs, baking powder, baking soda, and salt.

  5. Gradually add dry ingredients to wet, mixing until fully combined.

  6. Scoop large balls of dough (about ¼ cup each), roll slightly, and flatten to about ½-inch thick.

  7. Bake for 11–13 minutes or until edges are golden. The centers may look slightly underdone—that’s okay!

  8. Cool completely on a wire rack.

2. Make the Frosting:

  1. Beat cream cheese and butter until smooth and fluffy.

  2. Add vanilla and powdered sugar; beat until creamy. Chill slightly if needed for easier piping.

3. Make the Strawberry Topping:

  1. In a saucepan over medium heat, combine strawberries, sugar, and lemon juice.

  2. Simmer 5–7 minutes until berries break down. Add cornstarch if you want it thicker.

  3. Let cool completely.

4. Assemble:

  1. Pipe or spread a generous layer of cheesecake frosting on each cooled cookie.

  2. Spoon strawberry topping over the center of the frosting.

  3. Refrigerate for 10–15 minutes to help them set before serving.

  • These cookies are large and rich—perfect for sharing or gifting.

  • For a shortcut, use strawberry pie filling instead of homemade topping.

  • Store in the fridge in an airtight container for up to 5 days.
