🍴 What to Expect:

🧾 Ingredients

🐓 For the Buffalo Chicken:

  • 3 cups cooked, shredded chicken (rotisserie works great)

  • 1 cup buffalo wing sauce (like Frank’s RedHot)

  • 2 tbsp unsalted butter (optional, for richness)

🧀 For the Ranch Cheese Layer:

  • 1 (15 oz) container ricotta cheese OR 8 oz cream cheese (softened)

  • 1/2 cup sour cream

  • 1 egg

  • 1 packet dry ranch dressing mix (or 2 tbsp homemade mix)

  • 1 cup shredded mozzarella

  • 1/2 cup grated Parmesan

🍅 For the Lasagna:

  • 9–12 lasagna noodles, cooked and drained (or use no-boil noodles)

  • 1–1½ cups shredded mozzarella cheese

  • 1 cup shredded cheddar cheese (for topping)

  • Optional: blue cheese crumbles for garnish

  • Chopped green onions or parsley (for garnish)


👩‍🍳 Instructions

Step 1: Prepare the Chicken

  1. In a bowl, combine shredded chicken with buffalo sauce and melted butter.

  2. Mix well until fully coated. Taste and adjust spice level by adding more sauce or butter.

Step 2: Mix the Ranch Cheese Filling

  1. In a separate bowl, mix ricotta (or cream cheese), sour cream, egg, ranch seasoning, mozzarella, and Parmesan.

  2. Stir until smooth and well combined.

Step 3: Assemble the Lasagna

  1. Preheat oven to 375°F (190°C).

  2. In a greased 9×13″ baking dish, add a thin layer of buffalo chicken mixture.

  3. Layer 3 lasagna noodles over the chicken.

  4. Spread a layer of the ranch cheese filling.

  5. Add more buffalo chicken mixture on top.

  6. Repeat layers until all ingredients are used, ending with ranch cheese and chicken on top.

  7. Sprinkle cheddar and remaining mozzarella over the top.

Step 4: Bake

  1. Cover with foil and bake for 25 minutes.

  2. Uncover and bake an additional 15–20 minutes, until bubbly and golden on top.

  3. Let rest for 10–15 minutes before slicing.


🌿 Optional Garnishes & Sides

  • Drizzle ranch dressing or blue cheese dressing on top.

  • Add blue cheese crumbles.

  • Sprinkle chopped green onions or parsley.

  • Serve with celery sticks or a crisp salad.


❄️ Storage & Reheating

  • Store in fridge for up to 4 days.

  • Freezes well before or after baking (wrap tightly).

  • Reheat in oven at 350°F for 20–25 minutes.
