Here’s a simple and delicious recipe for Baked Apples with Feta, Honey, and Cranberries—a sweet and savory dish that’s perfect as a side, appetizer, or light dessert.

🍎 Baked Apples with Feta, Honey, and Cranberries

🧺 Ingredients:

  • 4 medium apples (such as Honeycrisp, Fuji, or Gala)

  • 1/2 cup crumbled feta cheese

  • 1/3 cup dried cranberries

  • 2–3 tbsp honey (plus extra for drizzling)

  • 1/2 tsp cinnamon (optional)

  • 1 tbsp chopped walnuts or pecans (optional, for crunch)

  • A pinch of salt

  • 1 tsp olive oil or melted butter (for baking dish)

🔪 Instructions:

  1. Preheat Oven:

    • Set oven to 375°F (190°C).

  2. Prepare Apples:

    • Core the apples, leaving about 1/2 inch at the bottom (to hold the filling in).

    • If desired, lightly score around the circumference of each apple to prevent splitting.

  3. Make the Filling:

    • In a bowl, combine feta, cranberries, honey, cinnamon, and nuts (if using).

    • Add a pinch of salt to balance the sweetness.

  4. Stuff the Apples:

    • Spoon the mixture into the hollowed apples, pressing down gently to fill.

  5. Bake:

    • Grease a baking dish with olive oil or butter.

    • Place the apples in the dish and add a splash of water (about 1/4 cup) to the bottom to prevent burning.

    • Cover loosely with foil and bake for 25–30 minutes or until apples are tender but still hold their shape.

    • Uncover for the last 5 minutes to lightly brown the tops.

  6. Serve:

    • Drizzle warm apples with a little extra honey before serving.

    • Serve warm as a sweet-savory side or dessert.

🌿 Tips:

  • Try goat cheese instead of feta for a tangier twist.

  • Add fresh rosemary or thyme for an herby note.

  • Great paired with roasted meats or a fresh arugula salad.
