Oatmeal Raisin Cookie Bars Recipe

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • ½ tsp salt

  • 3 cups old-fashioned rolled oats

  • 1 cup raisins

  • Optional: ½ cup chopped walnuts or pecans


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

  2. Cream the butter and sugars: In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).

  3. Add eggs and vanilla: Mix in the eggs one at a time, then add vanilla extract. Beat until smooth.

  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

  5. Combine wet and dry: Gradually stir the dry mixture into the wet mixture until just combined.

  6. Add oats and raisins: Fold in the oats, raisins, and nuts (if using).

  7. Spread into pan: Press the dough evenly into the prepared baking dish.

  8. Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  9. Cool completely in the pan on a wire rack before cutting into bars.


Tips & Variations

  • Soak raisins in warm water or a splash of rum for 10 minutes for extra plumpness.

  • Use chocolate chips instead of raisins for a sweeter twist.

  • Swap part of the flour for whole wheat flour for a heartier texture.
