🥒 Cucumber Cottage Cheese Wraps – Recipe

Ingredients (makes 4 wraps):

  • 4 tortillas (flour, spinach, or whole wheat)

  • 1 cup cottage cheese (small curd)

  • 1 medium cucumber, thinly sliced or julienned

  • 2 Tbsp fresh herbs (dill or parsley), chopped

  • 1 Tbsp lemon juice (or white wine vinegar)

  • Salt & pepper, to taste

  • Optional: ¼ cup diced red bell pepper, garlic powder

  • Instructions:

  1. In a bowl, combine cottage cheese, herbs, lemon juice, salt, and pepper.

  2. Warm tortillas briefly (10 s microwave) for flexibility.

  3. Spread ~¼ cup cottage cheese mix on each wrap.

  4. Layer with cucumber slices (and optional bell pepper).

  5. Roll tightly, slice in half, and serve immediately or chill slightly

Storage:

  • Store tightly wrapped or airtight in the fridge for up to 2 days. Cucumbers may cause slight sogginess after that .
