GARLIC PARMESAN ROASTED BRUSSEL SPROUTS

Garlic Parmesan Roasted Brussels Sprouts—crispy on the outside, tender on the inside, and loaded with savory garlic and cheese. A great low-carb side dish or snack!


🧄🧀 Garlic Parmesan Roasted Brussels Sprouts

🥬 Ingredients:

  • 1 ½ lbs Brussels sprouts, trimmed and halved

  • 2–3 tbsp olive oil

  • 3–4 cloves garlic, minced

  • ½ tsp salt (or to taste)

  • ¼ tsp black pepper

  • ½ tsp onion powder (optional)

  • ½ cup grated Parmesan cheese (fresh or pre-grated)

  • Optional: 1–2 tbsp balsamic glaze or lemon juice for finishing


🔪 Instructions:

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

  2. Prep Brussels Sprouts:
    Trim the ends and remove any yellow outer leaves. Cut larger sprouts in half for even cooking.

  3. Season:
    In a large bowl, toss Brussels sprouts with olive oil, garlic, salt, pepper, and onion powder.

  4. Add Parmesan:
    Add half the Parmesan cheese and toss again to coat.

  5. Roast:
    Spread sprouts cut-side down on the baking sheet. Roast for 20–25 minutes, flipping once halfway through, until golden and crispy on the edges.

  6. Finish:
    Sprinkle remaining Parmesan over the top during the last 5 minutes of roasting.
    Optional: Drizzle with balsamic glaze or a squeeze of lemon juice before serving for a flavor boost.


💡 Tips:

  • Extra crispy? Roast at 425°F, but watch closely to avoid burning.

  • Add crunch: Toss in chopped cooked bacon or toasted almonds just before serving.

  • Make it spicy: Add a pinch of red pepper flakes with the garlic.
